Ingredients
- 120grams plain flour
- 1/2tsp baking powder
- 1/2tsp bicarbonate of soda
- 70ml milkfull fat
- 60ml condensed milk
- 150ggrams toffee sweetssoft to medium hard
- 1large egg
- 50grams brown sugar
- 100grams icing sugar
- 2tbsp cream
- 2tbsp milkfull fat
- 50grams buttermelted
Instructions
- In a bowl mix together the flour, baking powder, bicarbonate of soda and sugar
- In a jug whisk together the milk, condensed milk, egg and melted butter
- Pour the wet ingredients into the flour mix and combine to make a batter
- Spoon the mixture evenly into a greased mini muffin tray (for extra decadence add a piece of chopped toffee to each one) and bake in the centre of the oven at 180* for 10-12 minutes until risen and golden brown
- Remove from muffin tray and cool
- For the icing and finishing: Combine the cream with the icing sugar, add the milk 1 tbsp at a time until the desired consistency is reached. Spread onto the cooled muffins
- Chop up the toffee sweets and generously scatter over the iced muffins
