Seared tuna and bacon salad with avocado

This is my favourite salad. I love seared tuna, as do I bacon and avo, then add a sesame flavoured dressing and the pop of toasted sesame seeds and I am in food heaven!

Perfect for those on a banting diet. But oh so perfect for those who are not too!

This really is a complete meal. High in protein, and simply delicious!

Ingredients
  • 150grams baby butter lettuce leavesor any mixed baby leaves of choice
  • 600grams tuna filletwhole
  • 200grams diced bacon
  • 2whole avocadosripe and cubed
  • 70ml good-quality olive oilextra virgin
  • 30ml sesame oil
  • 50ml lemon jiucefreshly squeezed
  • 1tbsp honey
  • 2tbsp sesame seedstoasted
Instructions
  1. Wash, dry and prepare leaves on a large serving platter
  2. In a pan over high heat cook bacon until starting to crisp and the fat has rendered. Set aside to cool
  3. In the same pan sear the tuna, ensuring to cook only the outside. Do not overcook as the tuna will lose moisture and flavour. Season. Set aside to rest for a couple of minutes, then slice into 1/2cm pieces, then again again the length of each piece so that they are bite size
  4. To make the dressing place the olive and sesame oils together with the lemon juice and honey in a jar, seal the lid tightly and shake to emulsify
  5. Dress the leaves with half of the dressing then top with the bacon first, then the avo, then the tuna, pour over the remaining dressing and finish with the toasted sesame seeds
