In honour of the World FairTrade Challenge, which runs from today, the 12th of May until the 14th of May 2017. I bring you a simple and quick, yet deliciously satisfying recipe, using products with the FAIRTRADE label, namely U_KUVU i-AFRICA Harissa, from North Africa and Madagascar Garlic Pepper #Yum!

Products with the FAIRTRADE label mean producers and businesses have met Fairtrade Standards. These directly benefit farmers and workers but also address the imbalance of power in trading relationships, unstable markets and the injustices of conventional trade.

Harissa Crispy Chicken Shnitzel
Crispy coated chicken breast with just the right amount of spice to hit that tastebud sweet spot!

Ingredients
  • 2 De-boned skinless chicken breasts
  • 1tbsp Harissa sauceU-KUVU i-AFRICA range
  • 2 eggswhisked
  • 4tbsp plain
  • 1tsp garlic PepperU-KUVU i-AFRICA Madagascar range
  • 1 1/2cups plain breadcrumbs
  • 1 1/2tsp salt
  • 2sides mixed green saladfor serving
  • 3tbsp good-quality olive oil
Instructions
  1. Pre-heat oven to 180* Butterfly each chicken breast and flatten to ensure even cooking.
  2. In a medium sized flat bowl add x1 tbsp Harissa paste to the whisked eggs and combine well. In another bowl add the garlic pepper to the breadcrumbs and mix through. Season the flour with the salt and dust each chicken breast, then carefully place in the egg mixture to ensure it is well coated. Place in the breadcrumbs ensuring that the crumbs cover each breast fully. Grease a flat baking sheet with x1 tbsp of the olive oil and place in the pre-heated for 20 minutes, turning halfway through. Remove to a plate and allow it to rest for a couple of minutes, before slicing and serving with a healthy green salad, dressed with the rest of the olive oil. Finish with lashings of homemade mayo or a good quality store bought alternative.
