This is the oven version of a favourite which I absolutely love to do on the braai. But whichever way you decide to cook them they are simply delicious and so easy to make. They are especially great as a snack when friends arrive for sundowners and are perfect when paired with a Rekorderlig “Cheeky Pear” cocktail! …Think blue cheese and pear, always the ideal match!
Crispy chicken wings with a blue cheese dipping sauce

Ingredients

chicken wings

2tsp
ground sea saltuse Himalayan salt if you have

ground rainbow pepperNatural Herbs and Spices

ground garlic flakesNatural Herbs and spices

ground peri periNatural Herbs and Spices

olive oil

200ml
buttermilk
-
70grams
blue cheese
-

baby spring onionsroughly chopped
Instructions
Pre-heat the oven to 200* celcius
Mix all of the spices together in a small bowl, generously season the chicken wings with the spice mix
Place the olive oil in a non-stick roasting tray and place the chicken wings on the tray, skin side down. Place in the oven and roast for 8 minutes. Turn and roast for a further 8 minutes flesh side down. Pop on the grill function, and turn once more allowing the skin to crisp for another 2-4 minutes, ensuring it doesn't burn. Remove and allow to rest for 5 minutes whilst you make the sauce
Place the buttermilk, blue cheese and spring onion in a food processor and blitz until sooth. A hand held blender can also be used. Season with black pepper only
Place the wings on a serving board with a side of the sauce for dipping, and serve with your Rekorderlig "Cheeky Pear"
