Everything is always better when it’s homemade and this granola is no different.
You can add a bit more oil and honey if you wish but remember that this will increase calorie intake…so make sure you balance it out elsewhere.

Homemade granola with minted yoghurt and berry coulis

Ingredients
- 4cups natural oatsI like Nairns gluten free range
- 2 cups almondslivers
- 2cups desiccated coconut
- 1/2cup pumpkin seeds
- 1/4cup flax seeds
- 1/4cup sunflower seeds
- 1/2cup macadamia nut oilextra virgin can be used as an alternative
- 1/4cup honey
- 1tsp cinnamon
- 1L yoghurt
- 2tbsp fresh mintchopped
- 1cup raspberries
- 1cup blueberries
- 1/2cup gooseberries
- 1tbsp xylitol
- 1/2 lemonjuice and zest
Instructions
- Place all of the dry ingredients into the bowl
- Whisk oil, honey and cinnamon until incorporated
- Add oil mix to the dry ingredients and work through with a wooden spoon
- Place on a non stick baking sheet and bake at 180* for 35-40 minutes or until golden
- Allow to cool and store in an airtight container
- Mix the mint into the yoghurt, allow to infuse over night if you can
- Place all of the berries, sugar replacement, lemon juice and zest the in a saucepan and slowly heat to a gentle simmer and allow the sugar to melt, stirring to incorporate. Allow the mixture to thicken for a couple of minutes. Remove from heat, allow to cool and then refrigerate.
- Place 250ml of the minted yoghurt in a bowl, top with ½ a cup of the homemade granola and 2 tbsp of the berry coulis, garnish with fresh mint
